Oh yes…Feeding your chucks is very easy and they tend to be voracious eaters. Feed them layers pellets or mash – we go through about one £7 20kg bag every two months or so for three girls – plus kitchen scraps, sweet corn etc. They also go mad for pasta and bread, which fed as an occasional treat is fine, apples and lettuce and bird seed. But be careful not to feed them raw potato peelings or anything rotten. And they love foraging for snails, slugs, worms etc. Don’t assume chickens are vegetarian. They will happily eat anything they can get their beaks on. I have had to prize our girls from dead frogs, slow worms and – horribly – an old chicken drumstick somebody threw over our fence which they found delicious. Thelma regularly raids the kitchen looking for cat food. Yuck! You’ll also need to offer them grit to help them digest their food, and ensure they get enough calcium. Sometimes older birds can have a problem with calcium uptake, so ground oyster shell in a small feeder can help. Don’t forget to give them regular flea and lice treatments too. 
&lt;p&gt;Many people ask whether it’s safe to keep cats and chickens. Don’t worry! While chickens are wary of cats, they will happily have a go at one that gets too close. Dogs and foxes are another matter, though. You need to be very careful of them. If you have a dog, introduce your new pets under supervised conditions, especially if you have a hunting breed of dog. Foxes are the enemy and will quickly kill every chicken in a coop if they get in. Usually they are around during the early morning, twilight and night hours but they are getting bolder and I have seen many in broad daylight. So don’t take any chances. After Thelma survived a fox attack a couple of years ago we now only let them out when we’re physically in the garden or the kitchen to keep an eye on them.

Usually you will get your hens at ‘point-of-lay’ – about 18 weeks old. Normally you have to wait a couple of weeks until they’ve settled before they will start laying. How many eggs they lay will depend very much on the individual breed, and there are lots. &lt;i&gt;&lt;/i&gt;&lt;a href="http://www.amazon.co.uk/Choosing-Keeping-Chickens-Chris-Graham/dp/0600614387" target="_blank"&gt;Choosing and Keeping Chickens by Chris Graham&lt;/a&gt; is a great book on breeds. Our girls are hybrids and lay one egg each day, six to seven days a week. They will tend to take the odd day off, and stop laying altogether during their seasonal moult because they need their energy to grow new feathers. They also lay less as they get older. 
&lt;p&gt;Get them to respond to your voice so you can get them back in the run when you need to. We find using sweet corn or other treats to reinforce our whistles helps enormously as chickens love food! They will quickly come running as they learn to associate your calls with grub. Also ask the person selling you the chickens how to hold them and clip their wings. 
&lt;p&gt;Find a good vet who understands poultry or birds. This was the mistake we made when we got our girls first. When Louise fell ill, we took her to a small animal vet who didn’t have a clue. The problem is farmers who keep hens tend not to spend a fortune on them at the vet because it’s uneconomical. So many vets are only used to diagnosing illnesses in poultry at post-mortem, which isn’t much help! Ask around. Hen keeping is becoming more popular so some vets are taking the time to do their research. We’ve now found a great vet who is fascinated by chickens and keen to learn more about them. 
&lt;p&gt;Something else to bear in mind is your neighbours’ reaction. It’s a good idea to let them know that you’re getting chickens and make sure they’re happy about it. We find leaving eggs on their doorsteps helps! After all, you might want to enlist their help when you go on holiday need somebody to take care of the girls!

Be aware of the pecking order. One chicken is always the top bird and the others will quickly learn their place. Another ‘deputy’ may take over the reins when the top bird is ill or dies. So do bear in mind that if you bring new birds into an existing pecking order pandemonium can ensue as it is re-ordered. Louise was top chicken and when she died and when we bought new birds Thelma spent a lot of time pecking Lexi and Molly and bullying them as she established her authority. It wasn’t pleasant – she wouldn’t let them out of the hen house to eat or drink at one point – but it did settle down eventually. Some owners resort to keeping two sets of hen houses when they get new chickens to avoid the fights.

Go on, I bet you’re tempted! 
&lt;p&gt;Keeping egg-laying chickens is probably the ultimate in convenience food besides a vegetable plot – and ideal given the rising cost of grub. During World War II many people kept chickens for the eggs. And they make fantastic pets. There’s quite a bit to get through, so I’ve split this little guide into part one today and part two tomorrow. Otherwise your heads will be swimming with information overload! 
&lt;p&gt;Before you get some image of me as a wannabe country bumpkin, I can assure you that chickens were not always part of my life. In fact when DJ first hinted that he wanted hens I thought he’d gone mad. 
&lt;p&gt;One night when he got back from work I asked whether there was any gossip at the office. “Yes. Tom’s got chickens!” He gushed. “Can we get some?” I thought he was bonkers, especially as we lived in an urban flat at the time. The thought of it was totally alien to me. Eventually once we moved house DJ wore me down and I agreed. And now I can’t imagine being without them. 
&lt;p&gt;&lt;a href="http://qca9sq.bay.livefilestore.com/y1ptNvRVHnUAsWjZduxoHTW_lECpyE-yxBLY0FTAwOXVzZ62H_xDR5GGGoIaO6qEEAulsIK2iVWpRitltwdhQZcrA?PARTNER=WRITER"&gt;&lt;img style="border-top-width:0px;border-left-width:0px;border-bottom-width:0px;margin:5px 5px 5px 0px;border-right-width:0px" height=184 alt="Soon you could be enjoying your own home produced eggs" src="http://by1.storage.msn.com/y1prOjHSJIFFG3YmNpgfM9NHZsazGGwWDwVHQ41BjXy5hnBsKq6_mG6Yl5LYVemahC20KK-3x52c0IJSWzlyoRPSVaZhXH0_F5c?PARTNER=WRITER" width=244 align=left border=0&gt;&lt;/a&gt; To keep a few chickens you’ll need at least a small garden or back yard that’s secure, so they can’t find their way into next door’s garden. Not that ours have ever really tried as there’s plenty of interesting things to eat at home. You’ll obviously need room for the hen house and run – probably about five or six feet by two or three feet – although it depends what time of house you get - and space for them to run around in when you let them out to stretch their legs and forage. Many breeds enjoy digging so make sure you protect your prized flower beds or vegetables! 
&lt;p&gt;We originally got Thelma &amp;amp; Louise (Louise sadly passed on last year) and their home from &lt;a href="http://www.omlet.co.uk/"&gt;www.omlet.co.uk&lt;/a&gt; which sells a yuppie-style hen house - the egglu - which has become very popular and is fox proof. It doesn’t come cheap, but they deliver the housing, set it all up for you and explain how to look after your new pets. But you can get wooden housing from a number of providers or even make it yourself, as one of my neighbours is doing. When Louise died, sadly we had to get replacements immediately because you can’t have a lonely chicken. They are social animals and Thelma was very lonely. So we went to a &lt;a href="http://www.hens4homes.co.uk/" target="_blank"&gt;local poultry specialist&lt;/a&gt; in Essex where they had a lovely selection of hens and the owner was very helpful. I’d suggest getting at least three because if you lose one, re-establishing the pecking order (as we discovered) can be very unpleasant and stressful for the girls, but more on that tomorrow.

We clean the hen house and run every one to two weeks – it probably depends on how many chickens you keep. Then you’ll need to top up their feed and water containers regularly, especially when it’s hot. Some people have got in touch worrying about whether they attract vermin. The food containers we have are off the ground and while Dougal the cat might catch the occasional mouse, we don’t get much more vermin that we did BC – Before Chickens…

One of our distant neighbours has moaned about the noise to another neighbour, but I think she may be confused with another neighbour’s pet duck, which was surprisingly noisy before the fox got it, poor chap. Everyone &lt;i&gt;else&lt;/i&gt; insists they’re really quiet. And let’s clear up a misconception now. You DON’T need a cockerel to get eggs. After months of inactivity, the plot is starting to come alive again – and the asparagus bed is incredible! This will be the first year we’ll be able to eat some of it – it takes about three years to grow it from seed. As you can see, DJ built a little frame to keep it from falling over, but now some of it has grown way past it and is even, dare I say it, taller than me! 
&lt;p&gt;But while plenty of things we planted have come up, including three different varieties of potatoes, peas, horseradish, and courgettes, a few things haven’t, which is worrying DJ a little bit. So we are going to plant them again today. He did grow some green manure in one of the patches and dug it in a while ago, and the instructions said that you couldn’t plant anything initially for a couple of weeks while the green manure settled in, but it should have been fine by the time we planted the veg, which is all a bit puzzling. Maybe the seeds were duds. Who knows? This is all the fun of vegetable growing!

Well, to be fair, some parts of the garden are mature and look good thanks mainly to the foresight and planting of the first owners of our house. But besides DJ’s fabulous vegetable patch, we’ve neglected the rest of the garden because until this year we’ve concentrated on updating the 1970s décor inside our house. 
&lt;p&gt;But planting up a garden can cost an awful lot of money, and we want to avoid spending too much cash on plants and shrubs that then might take years to fill out. So we’ve been taking cuttings of things such as our lovely euphorbias which are evergreen and quickly take up lots of room, and looking also to maximise certain plants that are wasted elsewhere in the garden and hidden by other stuff by moving them somewhere else. Plus we’re going to plant out some annual seeds we already have such as nasturtiums, nigella and busy lizzies etc. to get quick colour.

Although I suppose as long as you plant self-seeding ones or collect the seeds, as you can with nasturtiums for example, then it’s not a bad idea. 
&lt;p&gt;DJ and I love nasturtiums as they are so colourful, flower for months and quickly fill out a border or hanging basket with just a couple of plants. So we have planted up a hanging basket each with three nasturtium seeds in a competition to see which one will do better. He of course is convinced his one will win the day. He is really the gardener so is likely to be more successful, but on the other hand he admits he’s a vegetable man and doesn’t really ‘do’ flowers! 
&lt;p&gt;Meanwhile, I have to report that we’ve both been out a bit this week and haven’t had a chance to get to grips with the…er…flightless partridge (aka squirrel) yet, so we’ve had to put it in the freezer until next week when hopefully we will sample its delights.

But if DJ ever overcomes his morbid fear of ‘small people’ and we have kids, I hope I won’t be shovelling cheap pizzas and chicken nuggets down their throats morning, noon and night. 
&lt;p&gt;True, we’re all experiencing the brunt of rising food prices and nobody more so than people already struggling to make ends meet. It makes sense to look at the weekly shopping bill and try to trim it by shopping around. There is nothing wrong with that, or the odd pizza. I lived on microwave lasagnes before I met DJ and he showed me there was another way. 
&lt;p&gt;But even in an economic slowdown, I think it’s important not to start eating rubbish just to save money. It’s clear from all the research into cancer and our ‘five a day’ that eating good food - good quality meat, and fresh fruit and vegetables - is vital to stay healthy (before you say anything, I’m not sure if that includes squirrel!). However, nowadays proportionally people &lt;a href="http://www.thisismoney.co.uk/mortgages/article.html?in_article_id=429793&amp;amp;in_page_id=8" target="_blank"&gt;spend less of their income on food&lt;/a&gt;. In 1957 a third of incomes went on food and non-alcoholic beverages. Now we spend only 15 per cent on food and more on housing related costs, such as rent, mortgages and council tax, our cars and &lt;a href="http://www.independent.co.uk/news/uk/home-news/leisure-eats-up-more-of-income-than-food-743965.html" target="_blank"&gt;leisure time&lt;/a&gt;.

But often when the property market slows people spend money on DIY to improve the homes they can’t sell. So before you think of adding a new bathroom or kitchen, why not spend the cash on your family’s bellies by building a vegetable patch at a fraction of the cost? 
&lt;p&gt;Not everybody has a garden. If you don’t, then why not try to get an allotment? Or if that is too difficult because of the waiting lists, find a friend with an allotment to help out, or someone with a garden who also wants to grow veg you could join forces with and share the produce. There is a council estate in Bermondsey which has turned its entire communal lawn into a vegetable plot, and many &lt;a href="http://www.independent.co.uk/environment/green-living/the-citydwellers-who-are-becoming-front-garden-farmers-810294.html" target="_blank"&gt;urban food growing clubs&lt;/a&gt; that you may be able to join.  But if even if you can’t find a plot, then it’s still possible to grow herbs, tomatoes and lettuces in pots on your windowsill. You can also grow mushrooms in a box under the bed. Your friends may laugh but you’ll have your own delicious produce!

There’s also a &lt;a href="http://www.blueaustral.com/home-garden/five-traits-of-a-frugal-gardener/" target="_blank"&gt;little financial outlay&lt;/a&gt;, especially if your soil isn’t great. We have clay soil that’s hard to work and could have taken years to get right, so DJ cut to the chase by building raised beds on our lawn and filling them with bought topsoil. And you can’t plant your veg just anywhere. You need to see where the sun travels along the garden and which areas get the most light before you decide where to put your plot. Plus you’ll need to work out ways of storing your produce so as not to waste it. Many herbs, beans and fruits can be frozen, while other things, such as apple slices, can be dried or turned into jams and chutneys. If you want to be really clever, you could build a &lt;a href="http://www.bbc.co.uk/dna/h2g2/A225190" target="_blank"&gt;root cellar&lt;/a&gt; to store vegetables. 
&lt;p&gt;We also fight a running battle with pests, birds, foxes and cats which try to eat or dig up our plants, oh…and the odd rogue pet chicken that occasionally finds her way in there (naughty, Thelma!). But it’s really rewarding and the produce tastes so much better than anything from the supermarket. 
&lt;p&gt;So get digging!

He bravely insisted that the heat was not down to the chilli but the cider vinegar. Ah!  &lt;p&gt;But evasive action must be taken on the citrus fruit front before the pair of us disappear from public view and are found weeks later buried under a pile of rotting pommes. So yesterday I went apple mad, making three jars of apple &amp;amp; ginger jam, an apple pie and then using the peelings to try to start off some cider vinegar. All while Alistair Darling was trotting out his pre-budget on TV. I’m sure he and Gordon Brown would have approved of my prudence - maybe they could learn something!  &lt;p&gt;I was shocked at how peasy apple jam is to make (this is a Marguerite Patten recipe from an old cook book). Take a pound of apples (once peeled and cored), two teaspoons of ginger and half a pint of water and put in a big pan. Plus get a piece of muslin and stick the cores and peel in it and put it in the pan too. Simmer it all without a lid on until the mixture is a smooth pulp. Then stick in a pound of sugar and stir until dissolved. Next boil the mixture without stirring and check to see if it’s set. If you don’t have a sugar thermometer (as I don’t) you can do this by taking a spoonful and putting it on a cold plate to cool. Take the jam off the heat while you do this. Then when it’s cool push it to see if the spoonful has a skin that wrinkles when you do so - if so then it’s ready to put into the jars. Sterilise the jars before you use them.  &lt;p&gt;The &lt;a href="http://books.google.com/books?id=MhiEsdvQ03YC&amp;amp;pg=PA14&amp;amp;lpg=PA14&amp;amp;dq=make+apple+cider+vinegar+from+peelings&amp;amp;source=web&amp;amp;ots=XwFaZyH4H9&amp;amp;sig=WfP_tseSx9Tnw0lsK7aWq_phslw" target="_blank"&gt;cider vinegar&lt;/a&gt; is mad really - you sterilise a casserole dish or other crock with a lid, put in the peelings and cores from at least 12 apples and then pour enough water in to cover it all and then leave it for a few days.  &lt;p&gt;Despite my misgivings the jam turned out well. Between that and the &lt;a href="http://www.bbc.co.uk/food/recipes/database/maryhenrysproperappl_67463.shtml" target="_blank"&gt;apple pie&lt;/a&gt; which was ok but needs work - I used 12 apples but there are tonnes left over!  Next on the agenda is probably a cake. There’s also dried apple rings which, according to DJ, make a tasty, healthier snack. But you have to bake them in the oven on a low heat for five hours, so not sure how frugal that is.  &lt;p&gt;Incidentally, we had a result with the broken oven. I rang the manufacturer and was persuaded to sign up for an insurance plan for £149 - ok not so frugal but we were able to pay over a year without interest, and if it couldn’t be fixed they would replace it. Not signing up meant a call-out fee of a whopping £85 before parts etc.. I was in two minds as I hate these policies but agreed. In the event the oven fan cost £189 to fix but the policy covered it, so we now have a working oven and haven’t yet paid a penny. &lt;p&gt;Can’t believe how many apples we’ve harvested from our apple tree! The kitchen is full to bursting with them and we still haven’t quite worked out what to do with them all! Some are windfall ones carefully picked up off the ground, so a few have bruises, others were pulled off the tree by DJ on a step ladder before one dropped on his head and he nearly broke his neck falling off the ladder. 
&lt;p&gt;Well, it was high time we did something with them I’m sure you’ll agree! So I’ve been busy over the weekend trying to make apple chutney from some of them, although I admit I’ve barely made a small dent in the backlog. 
&lt;p&gt;I compared a number of recipes and decided to go for one in my Nigella Lawson book &lt;i&gt;How to be a Domestic Goddess &lt;/i&gt;which was a present a few years ago and I love looking at but must admit I‘ve hardly tried out any of the recipes. I found the chutney recipe by accident after drooling over some of Nigella’s dessert ones yesterday morning. But I only made a small batch of her apple chutney just to be on the safe side in case I decided I didn’t like it much. It’s a surprisingly cheap recipe really as I had the impression that most of the ingredients in Nigella’s recipes were fairly steep - organic this and organic that. Admittedly she did ask for some chilli peppers which I didn’t have and instead I substituted a couple of teaspoons of mild chilli powder. I just hope I didn’t make it too hot as DJ’s tolerance for spicy food isn’t great - he‘s a korma man whereas I‘m about madras level I think. 
&lt;p&gt;The &lt;a href="http://www.valskitchen.com/vals_kitchen/2007/09/apples-for-jam-.html" target="_blank"&gt;method&lt;/a&gt; was surprisingly easy too. Basically you just get all the ingredients (sugar, chopped apples, chilli, cider vinegar, ginger, ground cloves, black pepper etc.) and shove them in a pan, bring the mixture to the boil and cook over a medium heat for 30-40 minutes, stirring occasionally. The only slightly tricky bit is that - as with the brewing we did - you have to get some jars and sterilise them thoroughly before you put the chutney in to prevent your nice mixture getting contaminated by mould or other nasties. I just nicked DJ’s brewing sterilising powder, chucked a couple of teaspoons of it in a bowl of warm water (make sure you sterilise the bowl sides too) and then put the lids and jars in there for at least 10 minutes before rinsing them with clean water. 
&lt;p&gt;Luckily I’d - for once - had the foresight to rescue a few pickle and jam jars from the recycling box and give them a good wash, because otherwise I suppose you’d have to go out and buy/borrow brand new jars and they’re not always that cheap or easy to get hold of unless through the internet. One problem, however, with recycled jars is that the vinegar in chutneys can rust metal lids. You’re meant to put waxed circles on top but I’ve used a couple of layers of grease-proof paper instead, so will have to see if that works well or not…. 
&lt;p&gt;Mmm…have just had a taste and it’s surprisingly good actually. A little on the spicy side definitely and mine is brown and not green like the pic in the book because I substituted brown sugar for Demerara, but it’s good. Very gingery and just a bit like a fiery Branston pickle….!
